Goat Cheese & Chive Mashed Cauliflower

Love mashed potatoes? Then you MUST try this alternative!! My family told me that they wouldn’t be able to tell the difference between these “mashed” vs. REAL mashed.


I like cauliflower mashed because it fills the craving for mashed potatoes without making me feel sick from the richness of real mashed potatoes. Don’t get me wrong…I love mashed potatoes! However, if I want to eat them, I have to eat a small portion because it does’t sit well with me. I also add goat cheese to this recipe to give it that creaminess that everyone craves in mashed potatoes. Try out this recipe and let me know what you think!




Recipe:

Serves: 6 people as a side dish


Ingredients:

1/4 cup Minced Chives

1 Head of Cauliflower - Broken Into Florets

1 tsp Salt

1/2 tsp Granulated Garlic

1 tbsp 1% Milk

4 oz Goat Cheese



Topping Ingredients:

Maldon Salt or Finishing Salt

1 tbsp Minced Chives



Directions:

1. Using a large pot, fill 3/4 of the pot with water and salt the water generously. Bring the water to a boil and then add the florets.


2. Cook the cauliflower on high heat for 12-13 minutes or until fork tender.

2. Drain the cauliflower. Blend in a food processor or emulsion blender the cauliflower, salt, granulated garlic, goat cheese, 1/4 cup minced chives, and 1 tbsp milk until smooth.

3. Top with 1 tbsp chives and Maldon salt or a different finishing salt. Serve immediately!
