The warm weather is coming people!!! And do you know what that means? SUMMER GRILLING! We all know there is nothing better than having a side of coleslaw with that burger or dog off the grill. Now you don’t have to feel guilty eating it! This recipe delivers the taste and texture you desire, without the excess fat and sugar! Even better…it is soooo easy! The only labor intensive part is shaving the carrots…other than that, it is just mixing together! Go indulge in that summer BBQ because you are allowed!!
Recipe:
Serves 7-8 as a side
Ingredients:
1 - 8 oz Bag Shredded Red Cabbage
3/4 of a 14 oz Bag Old Fashion Cole Slaw Green Cabbage and Carrots
1 Cup Freshly Grated Carrots
Sauce Ingredients:
1 - 5.3 oz Container Non-Fat Greek Yogurt
2 tbsp Apple Cider Vinegar
1/2 tbsp Dijon Mustard
2 tbsp Mayo (I use Hellmann’s)
1/2 tsp Salt
1/2 tsp Garlic Powder
2 tbsp Soy Sauce (or Tamari if you need to be gluten free)
3 tbsp Real Maple Syrup
Directions:
1. Thoroughly mix the sauce ingredients in a small bowl.
2. Mix the other ingredients in a large bowl (cabbage and carrots).
3. Pour the sauce ingredients over the cabbage and carrot mixture and thoroughly mix. Let marinate for 30 minutes and then serve and enjoy!
