This recipe was inspired by the warm weather and wanting something refreshing to go with our grilled chicken! Not only is this side dish very healthy, it also has some added protein from the greek yogurt and the hummus. It is the perfect side to bring to a pick nick or a BBQ. It is cheap, healthy, and everyone will love it!
Serves: 4 (as a side dish)
3 cups quartered and 1/4 in. chopped english cucumber
2 tbsp ricotta cheese
2 tbsp plain greek yogurt
1 tbsp lemon hummus (I used whole foods brand but you can use other brands!)
1 tbsp lemon juice
1 tsp lemon pepper
1/2 tsp garlic powder
1. Mix all of the ingredients, besides the cucumbers, in a small bowl.
2. When ready to serve, place chopped cucumbers in a medium bowl and add the sauce.
3. Stir until the cucumbers are uniformly coated with the sauce.
4. Serve immediately.
