Bruschetta Mozzarella Chicken Breasts

Not only is this recipe easy and so yummy…it also has very few ingredients (good for costs) AND it is healthy! It also may look really cheesy, but it only has 2 pieces of fresh mozzarella per chicken breast. Lastly, it is NOT fried and instead is baked :).


Another thing that is awesome about this chicken, it is easy cleanup! I use aluminum foil and then you will have a clean sheet pan at the end of cooking! You can adapt this recipe to feed 6, just double the ingredients.


You can serve this dish with spaghetti squash, zucchini noodles, you favorite pasta, and/or with some roasted veggies and a salad!





Right out of the oven!!!


Recipe:

Serves: 3


Ingredients:


3 chicken breasts

1/4 red onion diced (around 1/2 cup)

2 medium/small vine ripe tomatoes chopped (around 1/2 cup)

1 tsp dried basil

2 tbsp Extra Virgin Olive Oil

1/4 tsp salt

1/4 fresh ground black pepper

Garlic powder

Generic Italian seasoning (without salt)

6 slices of fresh mozzarella cheese


Directions:


1. Preheat oven to 350.


2. Place the chicken breasts on a sheet tray that has a sheet of aluminum foil on it (easier cleanup). Using a sharp knife, cut a pocket in the center of the chicken breast. Make sure the pocket is big enough to fit two slices of mozzarella cheese in the pocket (it is okay if the mozzarella is slightly out of the pocket).


3. Stuff each chicken breast with 2 pieces of mozzarella and lightly season the tops of each breast with garlic powder and Italian seasoning.


4. In a separate bowl, mix together tomatoes, onions, salt, pepper, oil and dried basil. Evenly add the mixture to the top of each breast.


5. Bake in the oven for 35 minutes. Serve immediately!
