Berry Breakfast Cobbler with Frozen Fruit

Who says you can’t have cobbler for breakfast? Well I say YOU CAN! This recipe is low sugar, low carb, gluten free, ANDDD it tastes like dessert! What more can you want?


You can also make this a dessert option. Top with a little ice cream (dairy free if needed) and some whipped cream and you are good to go! You can still be healthy with a small portion of ice cream people! Everything in moderation and ice cream contains milk proteins and calcium…there is your justification :)






Recipe:

Serves: 5-6 people


Filling Ingredients:

6 cups frozen mixed berries or 1 1/2 bags

2 tbsp real maple syrup

2 tbsp corn starch

1/8 tsp salt

1 tbsp lemon juice

1 packed tbsp dark brown sugar


Topping Ingredients:

2 cups oats

2 tbsp real maple syrup

2 tbsp melted butter

1/8 tsp salt

1/2 tsp cinnamon


Directions:

1. Preheat oven to 350.


2. Put all of the filling ingredients in a 21x21x5in casserole dish, or a smaller oval casserole dish that you have in your house (not a standard size). Mix the filling with a spoon until evenly incorporated.

3. Make the topping in a separate bowl, mix thoroughly. Evenly add the topping on top of the filling.

4. Cook in the oven for 45-50 min or until the filling is bubbling and top is slightly browned.

5. Scoop onto a dish and serve immediately (careful, it may be hot). You can also make this a dessert and serve with a little vanilla ice cream!
