Autumn Sausage Sheet Tray Dinner


Love an all-in-one meal! This dinner delivers in everything you need…the fall starch, meat, vegetable AND cheese! This is also a great meal if you are entertaining because you stick it in the oven and then can walk away! Great for gluten free guests too! 😆😆



Recipe: feeds 6-7 people


Ingredients:

 

1 lb Brussels sprouts- cut in half or quartered if very large

2 medium sweet potatoes- peeled and cut into 1.5 in. cubes (around 5 cups chopped)

1 lb spicy sausage, 5 links (or chicken sausage/sausage of choice

Spray oil 

1/4 cup balsamic vinegar

Everything bagel seasoning

1 - 6oz container crumbled feta cheese

1 - 4oz (1 dry cup) container dried cranberries 

 

Sauce Ingredients:

 

1/4 cup balsamic

1/4 cup tahini

1/2 tsp salt 

1 tbsp maple syrup

 


Directions:

 

1. Preheat the oven to 350 and line a sheet tray with parchment paper or aluminum foil. 

 

2. Evenly place all of the vegetables on the sheet tray and then nestle the sausage in the mix. Spray everything with oil and heavily season with everything bagel seasoning.

 

3. Place in the oven and cook for 1 hour.

 

4. Take the sausage off of the tray, cut it into smaller pieces and re-place them on the sheet tray.

 

5. Fully combine the sauce ingredients in a small bowl or pourable large liquid measuring cup.

 

6. Add the crumbled feta, 4 oz cranberries to the sheet tray and drizzle the sauce over the top. Serve immediately!
