A hearty, warm and healthy bowl of goodness! This recipe is sure to warm you up on a cold night and keep you full for a long time. I also love this recipe because it will feed a lot of people. Great meal for a football night or just a healthy family night dinner :)
Recipe:
Serves 6-7
Ingredients:
2 tbsp Oil
2.8lbs Chicken Breasts (or rotisserie chicken)
1 Small Sweet Onion - chopped (3/4 cup)
1 1/2 tsp Garlic Powder
1 tsp Cumin
1 tsp Smoked Paprika
1 tsp Chipotle Chili Powder
4 oz can Diced Green Chiles
1 Knorr Chicken Bouillon Cube
6 cups of Water
1 cup Lowfat Milk
4 oz 1/3 Less Fat Neufchatel Cream Cheese
1/4 cup Shredded Sharp Cheddar Cheese
Topping Ingredients:
Minced chives
Tortilla Strips
Non-Fat Yogurt or Sour Cream
Shredded Sharp Cheddar
Directions:
1. Using a large pot, add oil and heat on medium high heat. Season chicken both sides with garlic salt and pepper. Add the chicken to the heated pot and cook for 3-4 min or until lightly browned. Flip and reduce heat to medium low. Cook for 10 min, or until chicken is golden brown and fully cooked. Remove chicken and place in a bowl. ***(if using rotissary chicken, skip this step!)***
2. In the same pot, add onions and spices and cook 1 min, stirring constantly.
3. Add green chili peppers and bouillon cube and break the bouillon cube up with the spoon.
4. And 6 cups water and 1 cup milk. Bring to a boil, reduce to a simmer, cover and cook 5 min. Add chicken back and cook 4 min on medium low covered.
3. Add the softened neufchatel cream cheese and 1/4 cup sharp cheddar cheese. Stir until fully combined. Top with chives, tortilla strips, yogurt or sour cream and a little more cheese!
